Easy Roasted Spicy Chickpeas
This delicious snack could be compared to a happy mixture of chips and croutons. You can just as easily put some in a green salad, on top of a soup, or savor them on their own as a tasty snack.
INGREDIENTS
1 (15-ounce) cans chickpeas
2 tablespoons olive oil
1 to 1 1/2 teaspoons kosher salt
2 to 4 teaspoons spices or finely chopped fresh herbs, such as chili powder, curry powder, garam masala, cumin, smoked paprika, rosemary, thyme, or other favorite spices and herbs
PREPARATION
Preheat oven at 400°F
Drain, rinse, and dry chickpeas on a dishtowel. Discard any chickpea skins that come off while drying.
Blend chickpeas, oil, and salt and spread on a cookie sheet.
Roast for 30 to 40 minutes shaking the pan every 10 minutes or so.
Toss in your choice of spices if desired.
And, that's it!
You can also rost the chickpeas in a frying pan on the stovetop or in the campfire.
Keep in a loosely closed jar.
