Honey Roasted Summer Peaches
This is the perfect summertime dessert and it's easy to make! Ingredients: (3 servings) 3 large peaches 3 1/2 tbsp. butter 2 tsp. ground cinnamon 4 tbsp. honey 1/2 cup of crushed pecans 4-5 cups of vanilla ice cream 6 mint leaves (optional for garnish) Directions: Preheat your oven to 350 degrees F/ 175 degrees C Cut the peaches into halves and remove their pits. Place the peaches facing upward on a baking sheet (coving the sheet with tinfoil avoids messy clean up). Place a small square of butter on each peach half. Sprinkle cinnamon on each and drizzle with honey. Place in the oven for 25 minutes and let cool for 5 minutes. Place pecans on baking sheet and toss with a small square of butter and a pinch of cinnamon. Bake in the oven for 10-15 minutes. Serve sliced peaches on top of ice cream and sprinkle with pecans. Finally top with mint leaves and enjoy!
